Homemade Peppermint Chocolates

My husband and I decided that this year, for the holidays, we would make all of our own goodies (mostly anyway).

So far we've tried a bunch of different things and haven't been disappointed with any of them. Today, I dove into making my own homemade peppermint chocolates. I love mint & mint plus chocolate together ...... OMG!!

Peppermint Chocolates

Ingredients

125g coconut oil (melted)

1/4 tsp peppermint oil

1 lindt dark chocolate bar or 1 pkg dark choc chips (I used half from a 70% bar & half from an 85% bar)

1 tbsp sweetener

Directions

Melt coconut oil in microwave then add peppermint & sweetener. Mix until sweetener has dissolved. Set aside.

Melt chocolate in microwave stirring every 20-30sec. Poor a bottom thin layer of chocolate in ice cube tray or any silicon tray (I sprayed the tray with a light layer of olive oil spray to prevent sticking) & place in freezer until set (approx 10 minutes).

Remove from freezer and add coconut oil mixture on top of chocolate layer. Place in freezer again until set, approximately 15 minutes. Next add remaining melted chocolate on top of peppermint to coat. Place back in freezer until completely set and enjoy!!
